Lentil pan

Ingredients

  • 250 g mountain lentils
  • 1 piece of ginger
  • 5 dried apricots
  • 1 bunch of soup vegetables
  • 1 red pepper
  • 1 fennel bulb
  • 200 g mushroom
  • 1 potato
  • 1 banana
  • yoghurt
  • 1 hard-boiled egg per person  
  • Curry
  • Salt
  • 4 tbsp olive oil
  • parsley

Preparation


Wash the lentils, cover well with water and bring to the boil. 

Cut the ginger and apricots into small pieces, add to the lentils and cook over a low heat for approx. 30 mins. Cook over a low heat for approx. 30 mins. 

In the meantime, cut the vegetables into strips. Heat the olive oil in the pan, add the vegetables and cook for approx. 3-4 mins, turning constantly. Mix the vegetables with the finished lentils, fold in the sliced banana and season well with salt and curry. 

Serve the dish with the halved eggs, yoghurt and some parsley.
